Tofu Lasagna

Ingredients
- 1 package Azumaya large square wrappers
- 10 oz spinach
- 2 Tbsp vegetable oil
- 1 medium onion, chopped
- 1/2 # mushrooms, sliced
- 1 clove garlic
- 1 1/2 # Azumaya firm tofu, mashed
- 1/2 c grated Parmesan or Romano Cheese
- 2 beaten eggs
- 1 Tbsp parsley, chopped
- 1/2 tsp salt or a Tbs. soy sauce
- 1/4 tsp pepper
- 3 c spaghetti sauce
- 1/4 c grated Mozzarella or Monterey Jack cheese
Instructions
- Preheat oven to 350*.
- Wash spinach, chop and steam lightly. Set aside.
- Saute' onion, mushrooms and garlic in 2 Tbsp vegetable oil. Set aside.
- In a bowl, mix together tofu, Parmesan or Romano cheese, eggs, parsley, salt or soy sauce and pepper.
- Mix together the sauteed vegetables and tofu mixture.
- Oil an 8" x 11" baking dish.
- Place a row of uncooked wrappers on the bottom. Build layers, alternating wrappers, tofu mixture, spaghetti sauce, spinach and grated cheese. The final layer should be sauce.
- Cover with aluminum foil; bake for 40 minutes.
- Remove foil and bake another 10 minutes.
