Ingredients
- 1/4 cup exra-virgin olive oil
- 2 Tbsp apple cider vinegar
- 1 head Delicato Butter Lettuce, cut into bite-sized pieces
- 1 to 2 lb watermelon, peeled and cut into chunks
- 8 Campari tomatoes, quartered
- 8 fresh mint leaves, half finely chopped
- 10 fresh basil leaves, half finely chopped
- Salt, to taste
- 1/4 cup feta cheese, crumbled
Instructions
- Prepare the dressing: In a small bowl, whisk together the olive oil and cider vinegar.
- In serving bowls, arrange Delicato Butter Lettuce, watermelon and Campari tomatoes.
- Sprinkle with chopped mint and basil.
- Drizzle with the dressing.
- Season with salt and finish with crumbled feta and garnish with int and basil leaves.
- Serve and enjoy. Makes 4 servings.
