Turkey Mushroom Rice

Ingredients
- 1/2 # sweet Italian turkey sausage
- 2 c sliced fresh Shittake mushrooms
- 1 onion (coarsely chopped)
- 1 c converted white rice
- 2 c reduced sodium chicken broth
- 2 Tbsp grated Parmesan cheese
- 1/2 tsp coarsely ground black pepper
Instructions
- Slice open and remove the casings from the sausage.
- Spray a large nonstick saucepan with nonstick spray, heat over medium-high heat.
- Add the sausage, mushrooms and onion, breaking up the sausage with a fork.
- Cook until the sausage is browned and the mushrooms and onion are tender, about 8 minutes.
- Add the rice, stirring to coat, and broth, bring to boil.
- Cover, reduce the heat and simmer until the broth has evaporated and the rice is tender, about 20 minutes. Stir in the Parmesan cheese and pepper.
