Vegetarian Balsamic Pasta

Ingredients
- 13.5 oz. box of whole wheat rotini pasta
- 3 tbsp olive oil
- 1 tbsp minced garlic
- 1/2 c reduced fat feta cheese, crumbled
- 2 tbsp grated Parmesan cheese
- Pepper and garlic salt to taste
- 3/4 cup Bernstein's Light Fantastico Roasted Garlic Balsamic dressing
- 1 small broccoli floret and 1 small cauliflower floret, both steamed and chopped.
- 1 large carrot, grated.
- 1 can of sliced black ovlies (green olives are fine, too)
- 10 grape tomatoes, slice each in half
- 1/2 cup of chopped fresh basil
Instructions
- Cook the pasta per the directions on the box and place in large mixing bowl.
- Drizzle olive oil on the pasta and toss to coat evenly.
- In a small bowl, combine the minced garlic, feta cheese, Parmesan cheese, salt, and Bernstein's Light Fantastico Roasted Garlic Balsamic dressing.
- To the pasta, add the veggies: broccoli, cauliflower, carrots, olives and tomatoes.
- Pour the dressing/cheese mixture over the pasta/veggies. Mix well.
- Add the basil and continue to mix.
- Serve chilled.
