  1. Add chicken and beef to the nescos
  2. Fill each Nesco 2/3 full with plain water
  3. Turn Nescos on high until boiling
  4. When boil achieved, turn down to low and let cook, covered, for 12 hours
  5. At 12 hours, turn off the Nescos and let cool until fat congeals and can be removed.
  6. Remove Chickens from Nescos into a large bowl.
  7. Remove the beef to a separate bowl and set aside.
  8. Debone and take out skin bits. Be real careful of the tiny bone, they are really hard to see.
  9. Return chicken meat back to broth
  10. Shred/chop the beef until very small, discarding any fat or gristle
  11. Return beef to the broth
  12. Remove beef bones and discard.
  13. Chop celery, make sure to chop up the heart and tender leaves
  14. Chop carrots into discs
  15. Chop potatoes into 3/4 inch chunks
  16. Combine vegetables and meat and broth.
