Ingredients
- 2 whole chickens (not frozen)
- 1 bunches of celery (1# each)
- 1 Bag Carrots (1#)
- 5 # Russet potatoes
- 2 Knorr Vegetable Bouillon Cubes
- 2 Knorr Chicken Bouillon Cubes
- 1 Knorr Beef Bouillon Cubes
- Green Tabasco, 15-20 shakes
- 0.75 # Beef Chuck Roast
- 2 Beef Bones for Flavor
- 50 oz Chicken Broth, 50oz.
- 2 Cups White or yellow onion
- 1/3 stick of butter
- 2 tbsp of (malt, apple, or wine) vinegar
- Lemon Pepper
Instructions
- Add chicken and beef to the nescos
- Fill each Nesco 2/3 full with plain water
- Turn Nescos on high until boiling
- When boil achieved, turn down to low and let cook, covered, for 12 hours
- At 12 hours, turn off the Nescos and let cool until fat congeals and can be removed.
- Remove Chickens from Nescos into a large bowl.
- Remove the beef to a separate bowl and set aside.
- Debone and take out skin bits. Be real careful of the tiny bone, they are really hard to see.
- Return chicken meat back to broth
- Shred/chop the beef until very small, discarding any fat or gristle
- Return beef to the broth
- Remove beef bones and discard.
- Chop celery, make sure to chop up the heart and tender leaves
- Chop carrots into discs
- Chop potatoes into 3/4 inch chunks
- Combine vegetables and meat and broth.
