Ingredients
- 1/4 cup jarred roasted red peppers, drained
- 2 Tbsp grated Parmesan cheese
- 2 Tbsp heavy whipping cream
- 1 tsp minced garlic
- 1/3 cup mascarpone cheese (3 ounces)
- Kosher salt and ground black pepper
- 4 cups Basic Zucchini Noodles
Instructions
- In a small blender, blend the roasted red peppers, Parmesan cream, and garlic until smooth, then transfer the mixture to a medium-sized microwave-safe bowl.
- Add the mascarpone and microwave on high for 1 minute. Whisk until smooth. Season to taste with salt and pepper.
- Add the zoodles to the sauce and toss to coat. Divide between 2 bowls and serve.
